In general, the formulation is the result of the combination of liquid aroma, with encapsulating agents and water. The manufacturing process can occur in two ways: atomization and dispersion. The choice of the best process depends on some factors, such as the application for which the aroma is intended. Main applications: snacks, powder mixes for cake, powdered soft drinks, among others.
They are the result of combining aromatic chemicals with solvents, compounds that will help in the solubility of the formulation and in the mixture of the aroma with its final application. These solvents will establish if the flavor is water soluble (soluble in water) or fat soluble (soluble in fat), which determines if it will be compatible or not with the base where it will be applied. Main applications: beverages, cookies, candies, among others.
They are obtained by a heating process, from raw materials that may or may not have flavoring properties on their own, with at least one containing amino nitrogen and the other being a reducing sugar. These ingredients, when subjected to heat, generate the “Maillard Reaction”, a set of reactions responsible for the formation of compounds that give a scent, flavor and color to food. The process is considered natural, as it is comparable to cooking food. They are considered natural or synthetic flavors according to the nature of the raw materials used. Main applications: soups, sauces, among others.
These are liquid compressed systems with two immiscible phases, where one phase is dispersed as tiny globules (oil phase, internal phase or dispersed phase), in another phase (aqueous phase, continuous phase or external phase). As these systems are very unstable, the use of emulsifiers, stabilizers and density brokers is necessary to promote system stability. In beverages are widely used, because they provide flavor, color and turbidity to the drink. Main applications: soft drinks, isotonic, alcoholic beverages, among others.

The authenticity of true cheese depends on its type, maturity, seasoning, composition, perfect eyelets, among other aspects. This was how the Cheese Experience collection was developed; we isolated molecules that give each variety its impact and flavor, developing exclusive biological bases and combined aromatic compounds in order to accurately reproduce the desired profile.
